Sweet Traditional
Our most complex Traditional Mead yet! Thousands of little honey bees made this honey from plants all over the Pacific NW. Each batch is made from a different honey. Examples include Snowberry, Fireweed, Mint Honey and MORE!!!
Oak Barrel
The mighty American white oak chopped into staves, charred to smoky perfection and soaked with flavor before being emptied and awashed again with liquid gold brings a bouquet of vanilla, caramel, and toasted coconut. The palate on this mead opens with sweet coconut, dark cocoa, and vanilla before transitioning into wild flowers with a finish of bourbon and molasses that lingers on the palate leaving the drinker in blissful enjoyment.
Plum
A complex fruited honey wine compared to its compatriots this mead gives forth an aroma of dried apricots, dark cherries, sun flower, wild flowers and a hint of sour. The palate opens with sweet plum before notes of dried fig, apricot and clementine add to the complexity of this wine. This mead does not show the same level of sweetness as the previous ones, instead complexity of flavor is the focus here.
Dragon’s Blood
Dark and brooding just like its name this mead is the richest of the offerings at Oppegaard. The aroma starts off red fruited from strawberries to raspberries, cranberries and cherries, the aroma finishes with hints of blueberry and elderberry. The palate is also a melange of flavor which continues to evolve as it glides over your tongue. The opening is slightly darker than the aroma as black fruit flavors dominate the more nuanced blue and red flavors, but by the finish that role is reversed. This dark, concentrated mead is sure to win over friends or will just crush them and see them driven before it, while listening to their lamentations.
Cherry
What is expected to be singular in aroma opens up with an earthiness very similar to a grape wine. Notes of dustiness and damp cherry skins carry this mead before it finishes with a touch of wild flower. The palate reminds the drink of sweet rainier cherries, that subtly change into dark cherries. Be ready this mead has a lingering and almost dry finish. This mead really does well to balance flavor against the canvas of sweet honey.
Blackberry
This honey wine is for fans of the blackberry in all of the forms we find it. Not only does the aroma conjure up memories of thorny blackberry bushes ripe with fruit in the warm twilight of summer it holds a fleeting note of blackberry cobbler cooling on grandmother's window. The palate is singular in focus with huge plump and juicy blackberry flavor bursting its way over your tongue like drink mix commercials of old. The flavor mellows out into a nicely balanced honey wine that doesn’t weigh on drinker with only sweetness.
Blueberry
The blueberry much like the blackberry holds true to its name in delivering non-stop, but balanced honeyed flavor of its namesake. The aroma can only be summed up as blueberries and flowers as any other notes are either not present or washed out by the force of this blueberry. Just like the viking shields on the wall of the tasting room and on the bottles. This elixir of the alcoholic variety has one intention and focus to bring you the taste of fresh and flavorful blueberry.
CASCADE HOP
The venerable cascade hop adds to the aroma in the form of white lilacs, oranges, tangerine rind, and soft peaches. The palate experiences flavors that get more and more exotic in nature with fruits like kiwi, white Japanese pear, nectarine, white peaches, and finishes with a slight note of violets petals.
Semi-Sweet
Each Numbered batch made from a different Varietal honey. Similar to the Sweet Traditional in it’s Variety and complexity but the lower sweetness level often means a broader range of flavor possible. Try it and see what flavors you can pick out from each amazing Pacific NW honey!
